Les Ingredients

For the cookie

200 g speculoos cookies

80 g de butter

For the cream

75 g sugar

2 eggs

65 g clotted cream

375 g cottage cheese

1 egg yolks

15 g of flour

1 yellow lemon

2 teaspoon of vanilla powder.

Preparation :

The cookie

Grind the speculoos in a blender to obtain a fairly fine powder. Then mix it carefully with the melted butter.

Arrange the mixture in the mold by pressing with the base of a glass. Then place in the fridge for a few minutes to get the preparation more solid.

The cream :

Preheat the oven to 180 ° C .

Remove lemon zest.

Mix the cheese for 30 sec using a blender to smooth it well.

Then add the ingredients: sugar, flour, lemon zest, vanilla powder, eggs and yolks, 1 by 1, mixing briefly each time.

Then add the cream.

Place everything into the mold and put in the oven.

After 15 min, reduce the temperature to 100 ° C and continue cooking for 1 h.

Turn off the oven and leave the cheesecake in for 1 hour more, with the door half open.

Remove from the oven and cool down completely before removing from the mold and placing it in the fridge.
