Bourbon vanilla ice cream
- 80 g sugar
- 5 egg yolks
- 350 ml of milk
- 150 ml liquid cream
- 1 vanilla bean « Gourmet » type
In a salad bowl, mix the egg yolks and sugar with a whisk until the mixture turns white.
Add the vanilla seeds from a split vanilla bean in half.
Add the fresh cream and milk. Mix.
Place the salad bowl in a double boiler to cook the custard preparation. It is important to stir the preparation regularly to avoid the formation of lumps. It takes about 15 to 20 minutes of cooking for the custard to be ready.
Place the custard in the ice cream maker and allow to turbinate until the ice is set.
