Gourmet pancakes with Madagascar vanilla
As Candlemas is approaching, get ready to delight your guests with this excellent recipe with exotic flavors.
Ingrédients pour 4 personnes :
- 300 ml semi-skimmed milk
- 125 g flour
- 50 g butter
- 20 g sugar
- 3 eggs
- 1 pinch of salt
- 1 pod of bourbon vanilla Prima selection of Sambavanilla
- 1 tsp amber rum
The day before, open the vanilla pod in 2 parts, scrape the seeds, and put in a saucepan with the milk.
Leave to infuse overnight in the refrigerator.
Heat the milk without boiling it, add the butter while stirring and let cool down.
Beat the eggs and sugar until the mixture turns white, then add the salt.
Gradually add this mixture to the flour, then stir in the milk-butter mixture, whisking well.
Then add a teaspoon of rum or cointreau.
Check the fluidity of the dough and add a little milk if it is too thick.
Let the dough for 1 hour rest minimum at room temperature.
Heat your pan and put a small knob of butter before cooking each pancake.
