Madagascar Bourbon vanilla rice pudding
Ingredients for 4 persons:
• 100 cl of whole milk.
• 80 g caster sugar.
• 100 g of rice.
Split the vanilla pod and bring gently to the boil with the milk.
Wash the rice with cold water.
Scrape the vanilla bean so that the seeds mix well with the hot milk.
Add the caster sugar and vanilla sugar to the milk and mix.
Then add the rice and stir until it comes back to the boil.
Reduce the heat and cook gently with cover for 25 to 30 minutes, stirring occasionally to prevent the rice from sticking to the bottom of the pan.
When the rice has absorbed most of the milk, remove from the heat and coll down.
Place the preparation among ramekins.
You can serve the preparation warm or cold.
