Harissa powder has its roots in Tunisia, where it is traditionally prepared as a paste from dried chillies, garlic, caraway, coriander and olive oil. In its powdered version, it offers a practical and just as tasty alternative, ideal for sprinkling directly on grilled meats or roasted vegetables, or for flavouring a Harissa couscous with roasted vegetables or a Harissa & lemon confit chicken tagine. This blend is distinguished by its unique balance between the spiciness of chilli and the warm, aromatic notes of caraway and coriander, giving it a distinctive intensity without masking the other flavours. Unlike ras-el-hanout, which is more floral and complex, or the merguez blend, which is more full-bodied and smoky, harissa remains the symbol of controlled fire, spicy but never overpowering. Composition:
Cayenne pepper, Paprika, Garlic, Salt, Caraway, Coriander seeds, Peppermint, Cumin.
Instructions for use:
Mix 2 to 3 teaspoons of spices with a little oil and stock to make a sauce for side dishes, or sprinkle directly over roast vegetables and grilled meats during cooking.
