Vanilla Tonka arranged rum

Ingredients for 0.75 l of rum:


4 Gourmet Black vanilla beans from Madagascar
6 Tonka beans
- 25 cl water
- 150 g Muscovado sugar
- 75 cl of white rum at 50° C



Preparation:

Split the vanilla pods in half lengthways.
Cut the Tonka beans into thin strips.
Prepare a syrup with the water and Muscovado sugar.
Add the vanilla and Tonka beans to the syrup and slowly bring to the boil, stirring the mixture.
Leave the vanilla and tonka beans to infuse while the syrup cools.
Place the mixture in a bottle and add the white rum.
Leave the preparation to rest for 3 to 6 months.
The longer the maceration time, the more the vanilla will develop its aromas.
Taste the preparation regularly to see if it evolves to your taste.
If the flavour of the Tonka beans becomes too strong, remove the Tonka beans and prolong the maceration.
Filter the preparation and put the vanilla beans back into the bottle.
