"Lady Finger" vanilla from Java is a rare and refined variety, originating in Indonesia, where vanilla cultivation dates back several centuries. Traditionally grown in the mountains of Java, this vanilla is characterised by its fine, elegant pods, often called ‘lady fingers’ because of their slender appearance. Unlike Madagascar vanilla, Lady Finger has more rustic notes, with a slight woody touch, making it perfect for desserts and preparations for arranged rums.
What sets Lady Finger vanilla apart is its texture and less sweet flavour profile, lending itself to savoury dishes such as seafood sauces or refined marinades. In traditional Indonesian cuisine, it is often used in dishes such as kolak, a dessert based on simmered tropical fruit. Compared with vanillas from Tahiti or the Comoros, Lady Finger is more versatile, well-balanced and less heavy, making it ideal for preparations requiring a delicate aroma.
