While green pepper is obtained from immature berries picked 6 months after flowering, black pepper comes from berries picked at the beginning of ripening and if the berries are further ripened, the pepper will gradually take on a reddish-brown colour.

There are also false peppers, such as pink berries, which come from shrubs in the Schinus family.
