Madagascan nutmeg.
Sambavanilla nutmeg comes mainly from the area of Nosy Be in the northwest of Madagascar.
Nutmegs are usually harvested, at the end of the year, that is from October to December.
After harvest, the nuts are dried and then sorted according to size.
In food preparation, nutmeg is well known for its use in the making of bechamel sauce.
It flavors perfectly potato dishes, but also pasta casseroles, gratins zucchini, pumpkin gratin, veal stew, carrot cake, pumpkin soup ...
It is also used in the preparation of rums, and in some desserts like cake or spice cake with nutmeg and the famous aphrodisiac chocolate cake nutmeg.

Petit noix mais un parfum remarquable. Très bonne qualité. Très peu suffit pour relever la volaille. J'en mets dans ma quiche lorraine et dans les tagliatelles à la carbonara. Un délice.
