In Madagascar, flowering pepper takes place twice a year from July to September and January to March.

The white pepper of Sambavanilla comes from the East coast of Madagascar (Tamatave region). It is picked when ripe, 9 months after flowering pepper "piper nigrum".

It is then separated from its bark and dried to obtain the final color.

White pepper taste is more powerful than black pepper.
